INGREDIENTS
Non stick cooking spray
3 cups non fat beef broth
2 garlic cloves minced
1 tbsp tomato paste
2 cups chopped cabbage
1/2 yellow onion, chopped
1/2 cup carrots, chopped
1/2 cup green beans
1/2 cup zucchini, chopped
1/2 tsp dried basil leaves
1/2 tsp dried oregano leaves
salt and pepper to taste
Directions
1. Spray soup kettle with cooking spray. Place onions, carrots and garlic
in kettle and saute for 5 minutes.
2. Add broth, tomato paste, cabbage, green beans, basil, oregano and
salt & pepper to taste.
3. Simmer for a about 5 to 10 minutes until all vegetables are tender then
add the zucchini and simmer for another 15 to 20 minutes.
