2 tbsp olive oil
1 small onion, chopped
1 cup shredded carrots
5 cups water
1 (6.2 oz) box fast-cooking long grain and wild rice mix,
seasoning packet reserved

1 (10 oz) box frozen chopped broccoli
2 cups chopped cooked rotisserie chicken
1 (8 oz) loaf Velveeta, cubed
1 (10.5 oz) can condensed cream of chicken soup, undiluted
Canned Sliced Mushrooms, optional


1. Heat oil in a soup pot over medium heat. Add onion
and carrots. Saute 5 minutes.

2. Add water, seasoning packet from the rice, plus the broccoli,
chicken and
mushrooms if desired. Bring to a boil then stir in rice.
Reduce heat, cover and cook 5 minutes.

3. Add cheese and soup; cook stirring constantly, 5 minutes or until cheese melts.
Serve immediately.

Yield: 6 Servings
