Soup Recipes

Ingredients

16 oz. can of tomatoes
1 large (7 oz.) can of diced green chiles
1 onion, cut into chunks
3 cups chicken broth or homemade turkey stock
3 cups bite-size pieces of cooked turkey
2 cups cooked brown rice
1 10 oz. package of frozen whole kernel corn
3/4 tsp ground cumin
fresh garlic cloves
1/4 tsp chili powder

1. Combine tomatoes and their liquid, chiles and onion; whirl until smooth.

2. Pour into a large pan, add broth and bring to a boil over high heat.

3. Reduce heat and simmer until heated through.

Serve with fresh cilantro, sour cream and tortilla strips.
