Ingredients
1/2 green bell pepper, seeded and chopped
1/2 red bell pepper, seeded & chopped
1/2 teaspoon dried mixed herbs
1/2 yellow bell pepper, seeded & chopped
1 teaspoon soy sauce
1 vegetable bouillon cube
1 (6 to 8 oz) container low fat plain yogurt
2 celery ribs, chopped
4 medium potatoes, cooked & diced
1 cup tomato juice
1 cup water
4 Heaping Tbs croutons, to serve
salt and pepper to taste
Instructions
Place all the ingredients except the croutons and vegetables into a food processor or blender and process until smooth. Pour the mixture into a sauce pan and slowly bring to a boil. Reduce heat and simmer gently for 5 minutes. Serve in warm bowls, sprinkled with croutons.
